Celebrate with Flower & White’s 15th Birthday Cake Recipe!

As we mark our 15th birthday, we’re sharing this festive recipe so you can join in the celebrations! Our fluffy vanilla sponge, topped with smooth pink buttercream and sprinkles, is perfect for any party. Bake along with us and make every slice a sweet tribute to 15 years of Flower & White!

Serves: 8-10

 

You will need

For the Cake:

225g unsalted butter, softened
225g caster sugar
4 large eggs
225g self-raising flour
1 tsp baking powder
2 tsp vanilla extract
2-3 tbsp milk

 

For the Pink Frosting:

150g unsalted butter, softened
300g icing sugar, sifted
2-3 tbsp milk
Pink food colouring

 

For the Filling:

4-5 tbsp strawberry or raspberry jam

 

Decoration:

Sprinkles for the base

Method

1. Preheat the Oven
Preheat your oven to 180°C (160°C fan) or Gas Mark 4. Grease and line two 20cm round cake tins.

 

2. Make the Cake Batter
In a large bowl, cream the butter and sugar until light and fluffy. Beat in the eggs, one at a time, then add the vanilla extract. Sift in the flour and baking powder, and fold gently. Add milk until the batter reaches a soft dropping consistency.

 

3. Bake the Cake
Divide the batter evenly between the tins, smoothing the tops. Bake for 20-25 minutes or until a skewer inserted in the centre comes out clean. Cool in the tins for 10 minutes, then turn out onto a wire rack to cool completely.

 

4. Prepare the Pink Frosting
Beat the softened butter until smooth. Gradually add the icing sugar and beat until fluffy. Add milk to reach your preferred consistency. Add a few drops of pink food colouring and mix until you achieve the desired shade.

 

5. Assemble the Cake
Once the cakes are fully cooled, spread the jam over the top of one cake layer. Spread a layer of pink frosting on top of the jam, then place the second cake layer on top. Frost the top and sides of the entire cake with the remaining pink frosting.

 

6. Decorate with Sprinkles
Gently press sprinkles around the base of the cake for a fun and festive look. Finish by topping with a Flower & White Birthday Cake Meringue Bar.

 

7. Serve
Slice and enjoy your beautifully pink, sprinkled birthday cake!
