Homemade Bagel Recipe

Perfect for a lazy weekend brunch. Our traditional bagel recipe requires no yeast to achieve delicious results! We recommend serving with a thick layer of cream cheese, piled with fresh smoked salmon and a squeeze of lemon.

 

INGREDIENTS:

500g of #BakeOn 80/20 Bread Mix

315ml of Warm Water

3 tbsp of Granulated Sugar

20g of Sesame Seeds to sprinkle on top (you can use pumpkin or poppy seeds instead!)

METHOD:

1. Using clean hands, mix together your bread mix and water in a mixing bowl until you form a ball of dough.

2. Tip the dough out onto a lightly floured surface and begin to knead for 10 minutes. Knead by using the heel of your palm and pushing down and out in the dough, then folding back into the centre. You want to stretch the dough as much as possible to achieve a better rise in the next step.

3. Return your dough to your mixing bowl and cover with a clean, damp tea towel. Place your dough in a warm area of the kitchen for 35-45 minutes, to allow for the perfect rise!

4. Once risen, tip out onto a lightly floured surface and begin to knock back the dough by kneading again for a further 5 minutes. Divide your dough into 8 equal sized portions.

5. Take one of your portions of dough and roll into a ball. Then flatten this dough by squeezing between the palms of your hand, the dough should be around 2cm thick.

6. Next take the handle of a wooden spoon and pierce through the centre of dough. You are now creating the signature bagel hole! Begin to spin your dough around the handle while rotating the wooden spoon. Keep this process up until you have a 2cm hole in your dough. (This should resemble a bagel/doughnut shape!). Carry out this process on all 8 of the dough balls.

7. Leave your newly shaped bagels on a floured surface to rise for 15 minutes and pre-heat your oven to 190 degrees Celsius. Whilst your bagels rise, fill a large saucepan with water and place on a medium heat. Your water should be around 20cm deep.

8. Add your 3 tbsp of sugar into the water and bring to the boil. Prepare 2 large baking trays with greaseproof paper and grab a fresh tea towel.

9. To create the signature bagel texture, simply drop your bagel into the boiling water and boil for 30 seconds on each side. Do this one at a time so they don’t stick to each other!

10. Use a slotted spoon to fish out the bagel from the pan and lightly place on the tea towel to dab dry. Once dry, place your bagel onto the baking tray. Repeat this process for all 8 of your bagels.

12. Bake you bagels for 20 minutes or until golden brown. Wait for them to cool and then tuck in!
