Limoncello Meringue Martini

Last April, we were super excited to be featured in Craft Gin Club‘s April box. For those of you who aren’t familiar, CGC is the UK’s biggest club for gin lovers – sounds good right?! Every month, members receive one special bottle of gin within with a box filled full of delicious treats (such as our scrummy low cal Meringue Bars!).


The clever folks at Craft Gin Club even created this Limoncello Meringue Martini inspired by our Lemon Meringue Bar which we simply love. Follow the recipe below and make sure you pop over to the Craft Gin Club website to find out how you can become a member!


Serves 2



70ml gin
50ml limoncello
50ml lemon juice
1 large egg white
65g caster sugar
1/2 tsp white wine vinegar



For the meringue: Whisk the egg whites with the white wine vinegar until soft peaks form then start slowly trickling in the sugar while continuing to whisk. When all the sugar is incorporated and the meringue is glossy and smooth it’s ready.

Add the gin, limoncello and lemon juice in a shaker with ice and shake well. Strain into a coupette and top with fresh meringue. Char the top of the meringue with a blowtorch and serve.
