This Easter, treat yourself to something truly irresistible – our Salted Caramel Ice Cream Cheesecake. With layers of buttery biscuit, creamy ice cream, rich caramel sauce and crumbled meringue bars, it’s a quick-to-make dessert that feels like pure indulgence – perfect for sharing (or not!) over the long weekend.
You will need:
2-3 plain digestive biscuits
1 tbsp melted butter
2-3 scoops of caramel ice cream
Caramel sauce
2 salted caramel meringue bars
Method:
1. In a small bowl, crush the plain digestive biscuits and combine with the melted butter. Grab a dessert dish and press the mixture into the base.
2. Layer with a scoop of salted caramel ice cream and press into the biscuit. Drizzle with a generous squeeze of caramel sauce and a layer of crumbled meringue bar.
3. Add a final scoop of ice cream, and finish with a salted caramel meringue bar and caramel sauce.
4. Grab a spoon and dig in!
