Easy Chocolate Caramel Cheesecake Meringue Sundae

This easy chocolate caramel cheesecake sundae is one of those looks-impressive, barely-any-effort desserts. We thought it would be especially cute layered into small sundae glasses - perfect for dinner parties or a relaxed weekend treat.

The 'cheesecake' itself is lighter than a traditional version, made with melted dark chocolate and maple syrup rather than refined sugar, then layered with salted caramel and crunchy caramel meringue for contrast. Simple, indulgent, and utterly delicious.


Ingredients

• 200g cream cheese (room temperature)
• 100ml double cream
• 2 tsp cocoa powder
• 2 tbsp maple syrup
• 150g dark chocolate, melted
• 4–5 tbsp salted caramel
• 2–3 Flower & White caramel meringue bars
• Dark chocolate shavings

 

Method 

1 Put the cream cheese, double cream, cocoa and maple syrup together into a large bowl and whisk until smooth. Gradually whisk in the melted chocolate until combined.  

2 Spoon some of the salted caramel around the sundae glasses and place a few spoonful’s of cheesecake (step 1) mix in it.

3 Crumble over the meringue bars and continue to layer with more cheesecake and meringue bar.

4 Finish with a drizzle of salted caramel and chocolate shavings.
