This recipe combines a creamy base, a burst of raspberry, a sprinkling of pistachio and the light, crisp texture of our Raspberry Crumble Meringue Bar.
You will need...
 
300ml double cream
40g demerara sugar
40g chopped pistachios
200g raspberries
3 Raspberry Crumble Meringue Bars
Method:
 
1. Whisk the double cream with the demerara sugar until it forms soft peaks.
 
2. Slice 100g raspberries in half and fold it into the cream.
 
3. Spoon the cream into bowls and sprinkle the pistachios and remaining berries on top.
 
4. Cut the meringue bars in half and use these to top each desert.
 
5. Grab a spoon and dig in!
