You will need...
 

For the cake:

  • 180ml brewed coffee
  • 140g unsalted butter
  • 85g cocoa powder
  • 373g light brown sugar
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 240g all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt

 

For the frosting:

  • 113g unsalted butter, room temperature
  • 180g powdered sugar
  • 21g cocoa powder
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk
  • 85g chopped chocolate or chocolate chips, melted and cooled

 

Decoration:

  • 1 pack of Oreo biscuits
  • 1 bag of our Salted Caramel Meringue Bites
  • Any other spooky decorations of your choice

Method:
 

1. Pre heat your oven to 180 degrees and grease a 9 x 13inch cake tray generously with butter or baking spray.

 

2. Heat the butter and coffee and butter in a medium saucepan over a medium heat until the butter melts. You can also do this in a microwave in small increments. 

 

3. Pour the mixture into a large bowl, add the cocoa powder and whisk until smooth. 

 

4. Add in the brown sugar, eggs, baking soda and salt. Whisk again until completely combined. 

 

5. Pour the batter into the prepared pan and bake for 20 - 30 minutes, until a a toothpick or knife comes out clean. 

 

6. Let the cake cool to room temperature in the tray set on a wire rack. 

 

7. Icing time! In a mixing bowl, beat the butter, powdered sugar, cocoa powder and salt until fully combined and smooth. 

 

8. Add in the melted chocolate and continue mixing until the chocolate is fully incorporated. pour in the milk and vanilla extract and beat to combine. The consistency should be fairly thick but add more milk if needed 1 tablespoon at a time. 

 

9. Once the cake is cooled, use the back of a spoon to spread the frosting over the top of the cake. 

 

10. Crush up your Oreos - a rolling pin works best - until fine and sprinkle on to the frosting. Push in the biscuit to stick and resemble dirt. 

 

11. Stick in your Meringue Bites to resemble grave stones and add on your other spooky decorations as you see fit!
