Chewy Meringue Bite Cookie Recipe

We’re a huge fan of chewy cookies so were delighted when our friends Mark and David from Our Life Blogged shared this delicious, soft and chewy cookie recipe with us! Easy to make and perfect for adapting to your favourite Meringue Bite flavours!

Pushed for time? Still can’t get your hands on flour? No problem! Our #BakeOn Cookie Mix can be used as a delicious alternative.

We split our ingredients to make two batches: Lemon and Chocolate.

INGREDIENTS:

300g plain flour

2tsp lemon extract or 2 tbsp cocoa powder (take out 2 tbsp flour if you use the cocoa)

½ tsp bicarbonate of soda

120g butter – melted

225g caster

1 medium egg

One bag Flower and White Meringue Bites (or two if you’re splitting your mixture)

METHOD:

1. Preheat your oven to 160°C and line a couple of baking trays with parchment paper or non-stick sheets.

2. Carefully break your Meringue Bites into good sized chunks and set the pieces aside for later. Keep your crumbly meringue bits for the next step!

3. In a mixing bowl combine the flour, bicarbonate of soda and your crumbly bits. If you’re making chocolate cookies swap out equal parts flour to cocoa. Mix to combine then set aside.

4. Using a microwave, melt the butter in a heatproof bowl or jug, mix in the sugar then add the egg and beat together. If you’re making lemon cookies then add your extract to the wet ingredients.

5. Pour the wet mix in to your dry ingredients and mix to a stiff dough with a wooden spoon/spatula.

6. Divide your dough into equal sized piece (about 60g), roll into balls then squish into pucks and place on your prepared baking trays, leaving room in between the cookies to allow for spread.

7. Bake for 8 minutes then remove from the oven and carefully push your Meringue Bite chunks into your cookies. Return your cookies to the oven for a further 8 minutes.

8. Cool your cookies on their baking trays for 10 minutes before transferring to a cooling rack until cool.

9. Enjoy!
