Crunchy Vegan Refrigerator Bars

You know which group you want to be in!! Whip up a batch (no cooking required!) and breeze through #Veganuary 2022 like a boss!

 

You will need:

14 pitted medjool dates

200g roasted buckwheat groats

100g raisins

200g coconut oil

3 tablespoons almond butter 

3 tablespoons cacao powder

2 F&W chocolate dipped strawberry vegan bars

 

Make it:

1. Place 200g coconut oil & 3 tbsp cacao powder into a pan on a low heat and cook until melted.

 

2. Pour into a food processor and add the medjool dates and 3 tbsp of almond butter. Pulse until well combined. 

 

3. Once combined mix through the buckwheat groats, raisins and F&W Vegan Meringue Bars. Pour into a lined baking tray and leave to set in the fridge for a least 2 hrs before tucking in (if you can wait that long)!
