Eton Mess Pancake Cereal (Feeds 2-3)
What is pancake cereal? Pancake cereal is simply lots of mini pancakes, cereal sized! Whip up at a moment’s notice for breakfast, brunch or a yummy dessert! Grab your spoon and sprinkle with your favourite toppings. ‘Do I add milk?’ well that’s up to you!
INGREDIENTS:
100g plain flour
2 large eggs
300ml milk
1 tbsp sunflower or vegetable oil, plus a little extra for frying
1 pouch of Flower & White Eton Mess – we chose caramel Your favourite sauce or chocolate to melt
METHOD:
1. Whisk together the plain flour, 2 large eggs, milk, 1 tbsp oil and a pinch of salt into a bowl until it forms a smooth batter. A thicker consistency is best so add a little more flour if your batter is too runny.
2. Pour the pancake batter into a squeeze bottle, but if you don’t have one to hand you can use a ziplock bag with a corner snipped off. Alternatively use a jug with a good pouring spout!
3. Heat up a non-stick pan over a medium-low heat. Brush a thin layer of oil on your pan. Squeeze out the mini pancakes (or carefully drip the batter from a jug) and cook until the pancakes start to bubble. When you flip them, they should be golden brown. Continue cooking for another 30 seconds or 1 minute, or until golden brown.
4. Meanwhile prepare your toppings – if you are drizzling with melted chocolate, now’s the time to melt it in the microwave or a bain marie.
4. Once cooked, gently tip the pancakes into a bowl and top with your favourite flavour of Flower & White Eton Mess. Drizzle with your favourite sauce, syrup or melted chocolate. Grab your spoon and enjoy!
