Must Bake! Haunting Spider Cookies

A healthier twist on a a moreish treat. These spider cookies are the perfect addition to any Halloween feast.

 

Energy Balls (our spider bodies!):

100g ground almonds

8 pitted medjool dates

2 tbsps cacao powder

1 tbspn almond butter

1 tbspn coconut oil

1 Flower & White Salted Caramel Meringue Bar

 

Cookie Base:

130g smooth peanut butter

100g ground almonds

2 tsp baking powder

105g plain flour/ gluten free flour

140ml maple syrup

To decorate:

100g dark chocolate melted

1 pack of edible eyes

Method:

Start by making the Cookie Base:

1. Preheat the oven to 180c. Line a baking tray with baking paper.

2. Place the ground almonds, baking powder, plain flour into a bowl and mix until there are no lumps.

3. Add the nut butter and maple syrup and mix until a smooth batter is formed.

4. Scoop one heaped tbsp of the cookie dough mixture out of the bowl and roll it into a ball. Repeat this process.

5. Place the balls onto the tray and squish down a little to form a cookie shape.

6. Once cooked, remove from the oven and leave to cool. 

While the cookies are cooling, let’s make the energy balls (our spider bodies!)

1. To a blender add the dates and blend until chopped.

2. Add the rest of the ingredients and bless until fully mixed.

3. Take a spoonful of the mixture and roll into a ball, repeat until you have used all your mixture

Now that your cookies have cooled…

1. Melt the dark chocolate (we recommend doing so with a bain marie)

2. Line up your cookies and begin to drizzle the dark chocolate on top of each one to form the spider legs. 

3. Cut the energy balls in half and place in the middle of the cookie, to form the spider body. Add eyes for a fun Halloween twist.
