No Bake Vegan Peppermint Brownie Truffles
If you’re looking for a ridiculously easy festive treat, then look no further than these deliciously rich and smooth vegan peppermint chocolate truffles!
Ingredients
119g / 1/2 cup of dates
1 tbsp cacoa powder
27g / 1/4 cup ground almonds
60g / 1/4 cup almond butter
Handful of Flower & White Mint Chocolate Vegan Meringue Bites.
Toppings
240g / 1 cup of melted dark chocolate
A couple of candy canes
Method
1. In a food processor blend together the dates, cacoa powder, ground almonds, Meringue Bites and almond butter.
2. Roll the mixture into 1 tbsp sized balls.
3. Melt the dark chocolate using a bain marie.
4. Roll the brownie bites into the melted chocolate until well coated.
5. Finish off with some crushed up candy canes and place in the fridge for 30 minutes until set.
