Delicious Cinnamon Bun Recipe

An instant (socially distanced) crowd pleaser! ? These cinnamon buns will give Mary Berry a run for her money ?! Our easy recipe makes 8 soft and fluffy homemade cinnamon buns.

Makes: 8 buns

INGREDIENTS:

For the dough:

• 2 ½ tsps of #BakeOn Yeast

• 400g of Strong White Flour

• 180ml of warm milk

• 35g of caster sugar

• 1 free range egg

• 1 egg yolk

• 35g of melted butter

• ¾ of a tsp of salt

For the filling:

• 100g of light brown sugar

• 1 ½ tbsp of ground cinnamon

• 30g of softened butter

For the icing:

• 110g of cream cheese

• 100g of icing sugar

• 45g of softened butter

• ½ tsp of vanilla extract

METHOD:

1. In a mixing bowl add your warm milk (not hot! It will scold the yeast!), egg, egg yolk, melted butter, sugar and yeast. Give a good mix until well combined.

2. Now add in your flour, bit by bit and mix well until your dough is formed. Tip your dough out onto a lightly floured surface and knead for 10-15 minutes. Alternatively, you can use a mixer with a dough hook attachment.

3. Place your dough back into your mixing bowl, cover with a damp tea towel and put in a warm place for 1 hour to rise. Your dough should have doubled in size after your rising time.

4. Once risen, tip your dough out onto a light floured surface and begin to knead again for 5 minutes. This makes for a light structured dough!

5. Using a rolling pin, roll your dough out into a rectangle around 30cm by 15cm and leave to rest. As your dough rests in its new shape, prepare the cinnamon bun filling. Do this by combining your cinnamon and light brown sugar in a bowl.

6. Once your filling is prepared, spread the softened butter over your dough, creating a thin even layer. Make sure to use all of the butter, this will make it soft and sticky in the middle!

7. Sprinkle your cinnamon and sugar mixture over your buttered dough ensuring an even spread. Gently press the cinnamon and sugar layer into the buttered surface to bring together.

8. Taking the short side of the rectangle, roll the dough tightly over itself, to form a swirled structure. Cut the newly formed dough roll into 8 even cinnamon buns.

9. Lightly grease a deep baking dish and place your rolls into this, leaving and even space between them. Place your damp tea towel over your buns and let rise for 20 minutes.

10. Whilst your dough is rising, pre-heat the oven to 190 degrees Celsius. Once risen, place your Cinnamon Buns in the oven for 15-20 minutes or until golden brown.

11. Once baked, leave to cool whilst you prepare your icing.

12. To create the signature cream cheese icing, combine your softened butter, cream cheese, vanilla and icing sugar in a mixing bowl. Mix together until well combined with no lumps!

13. You want to add your icing over the top of your buns whilst they are still warm – so apply a generous layer over the top of your buns whilst they are still in their dish.
