Gluten Free Lemon Pistachio Cheesecakes by Ella Nurse

It’s #CoeliacAwarenessWeek and we’ve teamed up with our friend Ella Nurse to bring you these scrumptious gluten free Lemon Pistachio Cheesecakes – made using gluten free oats and topped with our Lemon Meringue Bites.

Serves 12

INGREDIENTS:

• 200g gluten free oats

• 100g shelled pistachios

• 100g butter

• 200g full fat cream cheese

• 150g extra thick double cream

• zest of 2 lemons • juice of 1 lemon

• 100g icing sugar

• 1 jar of lemon curd

• 12 Flower & White Lemon Meringue Bites

• Optional: extra crushed pistachios and freeze dried raspberries to decorate

METHOD:

1. Place the oats and pistachios in a food processor and blend until a rough crumb texture is reached.

 

2. Add the butter to the processor and blend again until fully combined.

 

3. Grease and line a 12 holed cheesecake tray or muffin tray.

 

4. Distribute the oat and pistachio mix every between the holes and press down firmly to compact the base.

 

5. Chill for 1 hour.

 

6. Whilst the base is chilling, begin making the filling by placing the cream cheese, double cream, lemon zest, lemon juice and icing sugar in a large bowl or stand mixer and whisk for around 5 minutes at high speed until thickened.

 

7. Remove the bases from the refrigerator and evenly fill each hole with the lemon cream cheese filling.

 

8. Return the tray to the refrigerator to chill for at least 5 hours, ideally overnight.

 

9. Once set, remove each cheesecake from the tray and spoon over the lemon curd.

 

10. Top with a Lemon Meringue Bite and a sprinkling of crushed pistachios and freeze dried raspberries to decorate.

 

11. Store in the refrigerator and remove 20 minutes before serving.
